First of all, as a bus driver, OMSI is pretty realistic. Although it's a bit slow for me I end up getting into my routine of never sitting still and get way ahead of schedule.
I notice, however, that oil pressure is inaccurate when the engine is cold. In my experience, cold engines will have very high oil pressure (up to 60~ psi, 4~ bar) due to the oil being thick and not very viscous. As the engine warms up the oil pressure will drop to normal levels. Engine temperature and oil pressure at idle seem to be inverses of each other (ie, high engine temperature leads to normal/low oil pressure and cold engine temperature leads to high oil pressure). When driving, oil pressure doesn't rise above the 4~ bar area, either.
My 2 cents

My oil pressure is like a rev counter. Nothing like the buses I drive. :/

Almost every MAN bus is quiped with this Oil Pressure gauge, Digital\Analog. i find it quite realistic though in public buses i used to follow this gauge and it looks very accurate.

Right, when it's warm. When cold the oil pressure should be spiked.

The oil pressure gauge is actually working the same as it is in Omsi.. Not sure how everything works exactly, but it does acting the same as in real life.

Saying that, I do drive Dennis' and Volvo's.

It must be a per-engine thing? For example: https://www.youtube.com/watch?v=RXdX1VSJbS8 Here, the bus is started and the oil pressure is about 50~ psi (3.5~ bar) at idle but will drop to normal levels when warm (when idling, obviously it's high when revving)
